This Healthy Vegan Caesar Dressing is oil-free, nut-free, and soy-free—but bursting with bold, savoury flavour. It blends up in minutes and adds a luscious, plant-based twist to salads, bowls, wraps, or roasted veggies.

Ingredients:

  • 1/4 cup Cannellini beans or Butter Beans 

  • 1/4 cup Sunflower Seeds

  • 1 Garlic clove

  • 1 tbsp Nutritional Yeast

  • 1 tbsp Lemon Juice

  • 1 tbsp Capers

  • 1 tbsp Caper Juice

  • 1 tsp Dijon Mustard

  • 1 tsp of vegan Worcester sauce

  • 1/4 cup of filter water (more if needed)

Instructions step by step:

Step 1 – Gather & Prep

Peel the garlic and roughly chop it. Add it to your blender cup along with all the other ingredients except the lemon.

Step 2 – Blend & Adjust

Squeeze in the juice of half a lemon and blend until smooth. Taste the dressing—add more lemon, mustard, or capers if you’d like a bigger flavour kick. If it’s too thick, blend in a little more water.

Step 3 – Serve or Store

Use it straight away over salads, roasted veggies, wraps or bowls. Or pour it into a glass jar with a lid and store it in the fridge for up to 1 week. It gets even better after a day as the flavours develop!

  • Start by adding 1/4 cup of water when blending, then add more or a splash of caper juice if the dressing feels too thick.
  • I love using a high-speed blender for extra smoothness, but a regular blender works just fine too!
  • For an extra zing, add a little more lemon juice or Dijon mustard to brighten the flavour.
  • If you prefer a milder garlic taste, use half a clove instead of a whole one.

About these Ingredients:

Sunflower Seeds: They add creaminess and richness without nuts or oil, plus a boost of healthy fats and vitamin E. You can swap them with cashews or other mild nuts or seeds.

Cannellini Beans: These creamy beans keep the dressing rich without any oil. Their mild flavour lets the other ingredients shine, while adding a boost of protein and fibre. You can swap them for other white beans or extra sunflower seeds if you like.

Capers: These little flavour bombs bring a tangy, briny kick that gives this vegan Caesar dressing its classic savoury edge. They add depth and umami without the need for anchovies or cheese. 

Vegan Worcester Sauce: This adds a deep, savoury umami flavour with a hint of tang and sweetness. It helps mimic the depth of traditional Caesar dressing without using anchovies—bringing that bold, complex taste in a completely plant-based way. If you don’t have you can omit but will not be the same.
