Fresh coriander adds a bright, herby kick that perfectly balances the zingy lime juice and zest. Garlic brings gentle warmth, while miso adds a savoury depth that ties everything together beautifully. It’s vibrant, flavourful, and seriously versatile—delicious over salads, baked potatoes, tacos, grain bowls, or even as a dip!
Tips for the Perfect Dressing 🥑
Choose a ripe avocado: Go for a medium, creamy avocado for the best texture and flavour.
Control the heat: For a milder spice, use jalapeño or green chilli with the seeds and membranes removed. Start with a small amount, then blend and taste—add more if you’d like extra heat.
Adjust the consistency: Begin with half the water, then add more as needed to reach your ideal creaminess.
Balance the flavours: If the dressing tastes a bit too sharp, try adding half a date or 1 tsp of date syrup for a touch of natural sweetness.
About these Ingredients:
Avocado: Creamy avocado gives this dressing its rich, velvety texture and is the only source of healthy fats here. It’s also packed with fibre, antioxidants, and essential nutrients like folate, vitamin K, vitamin C, and vitamin E — making this dressing as nourishing as it is delicious!
Coriander (Cilantro): Fresh coriander adds a bright, citrusy, and peppery kick that balances the creamy avocado and tangy lime. It’s full of antioxidants and gives your dish a vibrant green pop. Not a fan? Swap it for basil or parsley for a tasty twist!
Fresh Lime Juice: Lime juice adds a zesty, tropical freshness that brightens the whole dressing. It balances the mango’s sweetness and miso’s richness, bringing all the flavours together. Plus, it’s rich in vitamin C and adds a summery vibe to every bite.
Miso Paste: Miso adds a savoury depth and umami richness that makes this dressing extra satisfying. It helps balance the tanginess of the lime and the freshness of the herbs, tying all the flavours together. Plus, it’s fermented, so it brings a little boost for your gut health too!
Jalapeño or Green Chilli: These add a gentle, warming heat that wakes up the flavours without overpowering the dressing. Removing the seeds and membranes softens the spice, making it easy to adjust the kick to your liking. It gives the dressing a lively, fresh edge that pairs perfectly with the creamy avocado and zesty lime.

Garlic: Garlic adds a subtle warmth and depth that lifts the whole dressing. Its natural pungency complements the fresh herbs and tangy lime, giving the dressing a deliciously savoury kick without overpowering the other flavours. Plus, it’s a natural immune booster—bonus! If you’re not a big garlic fan, feel free to use just one clove instead.
