Easy Oat Banana Cookies

These are the easiest, healthy and delicious cookies you will make. They come together under 10 mins and cook in 15 mins. These cookies are fantastic for breakfast or a post-workout snack or for dessert! They're vegan, gluten-free, sugar free, soy free, and have no added oil. They are great to do with little people. They are crispy on the outside and soft inside, great on is one or with a glass of plant milk.

  • Goji Berries

  • Chocolate Chips

  • Ground Cinnamon

  • Ground Nutmeg

  • Ground Ginger

  • Ground Cardamom.

Instructions

Step 1 – Smash the bananas with a fork until smooth. Preheat the oven at 170C.
Step 2 – Add the ground linseeds to the oats and mix. Now fold the banana and peanut butter. You can add some extras now, I add goji berries.
Step 3 – Set up a baking sheet on an oven tray. With a spoon grab a portion of the dough and drop in in the tray. Shape it with your hands into a cookie shape. Bake for 15 mins.

About the Ingredients

Oats: I’m using organic jumbo oats here. You can use any oats you have, it will change the texture slightly but you should have similar results. I blended half of the oats in a food processor to make the mixing easier and to add another texture. When I use rolled or porridge oats I skip this stage.

Nut Butter: I’m using my very own peanut butter. Almond butter works very well too but you can use any nut butter you prefer. Doing your own nut butter it’s so easy and rewarding. You only need one ingredient a bit of time and love.

Linseeds: I’m using golden linseeds, but any type of linseed will work here. I like the golden colour they add to the cookies. Linseeds or Flaxseeds are a super food, they have been shown to help with inflammation and help prevent cancers and diabetes. I add them to my oatmeal in the morning and in everything I can.

Optional add-ons: You can add Goji Berries, Chocolate Chips, chopped dates or some warm spices like Cinnamon, Nutmeg, ground Ginger or Cardamom.
